Beijing Duck
Newcommer's first experience.
Eating Peking duck is no simple matter. First, you have to separate the skin from the meat. Then you dip the skin in sugar—yes, sugar—and eat it first.
Eating the meat is an entirely different process. You take a thin pancake, served alongside, and hold it flat in the palm of your hand. On top of the pancake, you put some vegetables—perhaps cucumber, scallions, or green beans—add some sauce, and wrap it up. Then you pick it up with your fingers and put it into your mouth.
